Sweet Potatoes have been discovered for their great taste & variety of dishes.  But, they are also known to be high in nutrients and a good source of fiber. 

Important nutrients such as:

vitamin A, vitamin C, Manganese and several  other vitamins & minerals.

One medium cooked sweet potato also contains:

Vitamin B6,Potassium,Pantothenic Acid, niacin and thiamine

 Sweet potatoes are also know to contain:

Vitamin E, Vitamin K, calcium & iron.

So it kind of makes sense to include a sweet potato or two in our diet just for the health benefits listed above.

They taste good too!

Sweet Potato Casserole for 6 people

  • 3 cups of sweet potatoes – mashed
  • 1 1/2 cups of brown sugar
  • 2 eggs, well beaten
  • 1/2 tsp.salt
  •  1 1/2 tsp. vanill
  • 4 tbsp. butter, melted
  • 1/2 cup of milk
  • 1/4 cup raisins, optional

The Topping:   

  • 1/2 cup brown sugar  
  • 1/3 cup flour
  • 1 stick butter
  • 1 cup chopped pecans

Boil or bake potatoes until tender.  Peel,mash well & set aside., 

In a separate bowl : Combine 1 1/2 cups of brown sugar,eggs, salt, vanilla, butter & milk.  Beat well  

Stir in raisins (optional) 

Add potatoes, mix thoroughly.  

Pour in a greased baking dish. 

Make topping by combining 1/2 cup brown sugar & flour thoroughly,  Add melted butter slowly,mixing well.

Add pecans & mix.  Sprinkle topping over entire potato mixture. 

Bake at 375 degrees for 40 minutes.
